| Hi All - I have several pounds of long green chili pappers that I was going to slice and pickle. I let them sit a do or so too long and they are no longer as firm as when I got them. Any thoughts on what to do with them now? Could I still pickle them? Would they be any good?

| As with cucumbers and other fruits or vegetables that have over-ripened the best use I've found is to grind them fro one of the many relishes. Pickled as sliced rings they will be quite soft, not usually a desirable texture to have. But in a ground relish that texture isn't noticeable. There are any number of relish recipes they can be used in either alone or mixed with other ingredients. Dave |

| Peppers and cucumbers are both very susceptible to softening and it happens fast. Unfortunately, a lot of produce is time-sensitive and when canning it's often "go without sleep but get it done" or forget it. Inferior products yield inferior results. I go with Dave's relish idea or do a piperade variation for the freezer. The link below is the recipe I use. It calls for bell peppers but a mild hot pepper should work well. Carol |

| Are these anaheim type peppers? If so, I agree that they aren't going to make good pickles at this point. However, you can still roast them (high heat to blister the skins, not cook them), peel and freeze (either in big slabs or diced) for use as "green chilies" in recipes. I often do this anyway and use for Chili rellanos, chicken enchiladas, white chicken chili, etc. Deanna |
