Apple cider vs Lemon juice

I will be making well over 100 pints of Salsa this year. Last years stash is long gone and we don't get ripe tomatoes until mid August. I most always use all lemon juice or at least half lemon juice and half white vinegar. What taste differences can I expect if I use straight Apple cider vinegar? I prefer white distilled vinegar for my pickles, relishes, Dilly beans and other pickled products.

Personally, I like the cider vinegar in my salsa better!
It blends well with the sweetness of the sugar, tomatoes, etc.

I also like white vinegar for pickles...mostly it's a color issue for me, I could put cider vinegar on everything and be happy, but it does change the color of veggies.

I don't know what recipe you're using, or how much vinegar is in it, so it's hard to say definitively how much change you'll taste.

Why not try a small batch to see if you like it?

It depends upon whether your safe recipe calls for bottled lemon juice or vinegar. You cannot use vinegar if bottled lemon juice is called for since the lemon juice is twice as acidic as vinegar. It would be needed for safety, not for flavor.
I like cider vinegar instead of white in salsa. It is more mellow and not so tart tasting.
I use Annie's salsa recipe and pressure can it. I am going to cut down on the sugar, though.

My recipe calls for vinegar, however I prefer lemon juice and use the same amount called for as using vinegar.

We also prefer the cider vinegar in salsa. We do the 1/2 and 1/2 with lemon juice and cider in Annie's recipe and PC it.

But then we sometimes use it in pickles too so I guess you could say we just generally prefer it over white vinegar.

Best way I can think of to describe the difference in taste is cider vinegar tastes sweeter to us, less "edge", less pucker factor. Like Linda Lou said, more "mellow".

Slice a tomato and put 1/4 to 1/2 tsp of white on one slice and same amt. of cider on another and you get a good idea of the difference.

Cider vinegar works bvery well, or you could use bottled lime juice instead of lemon or vinegar. Cider vinegar tends to offer a more mellow taste

I use Annie's recipe but instead of all white vinegar I use half lime juice and half cider vinegar. We like the more melow taste.
