| Odd question! I'm pretty new to canning and would like to see if anyone has come across this as well. I canned a few pints of peaches today that I picked up from the farmers market, and after I removed them from the water bath, I could smell them very strongly. I'm assuming that this is normal, since the air needs to escape ensuring a good seal, and seal they did, but I just wanted to make sure! |

| It happens and poses no safety issues IF the jars seal well. But it can and should be avoided when possible since it can interfere with the sealing. It just takes a bit of practice and experience. It means you had some boil over during the processing - a bit of the flavored syrup escaped from the jar and into the water. Usually it results from overfilled jars and inadequate headspace but can also happen when the jar bands are improperly tightened. Once you remove the bands for storing you'll want to wash the jars really well especially around the lids. Dave |
