A friend dropped off 15#'s of Rainier cherries today - FREE!. They are delicious. However, I have never worked with them and don't know what to do. I have canned (non pitted) Bing cherries in light syrup. Can I do the same with Rainier? Do I need to pit them? What do others on this site do with them or use them for? I am guessing I need to deal with them asap - not what I had planned for the weekend but since 'Free' works for me they will be my number one priority. Thanks for the help,

Cherries, any kind, should always be pitted first because of the pit toxicity. Otherwise you can do anything with them that you would do with other cherries - jelly, jam, pie fillings, freeze for later use in all sorts of baking, ice cream topping, syrup, etc. They are sweeter than many other varieties so add sugar to taste rather than per recipe in many things. They blend really well with chocolate and with apricots for a fruit blend. Check out the link below for some recipes. Dave

An old fashioned way to pit cherries is to use a bobbypin, poke it in the stem end with the closed end of pin, hook the pit and pull it out. Leaves a good looking cherry without having to cut the cherry. Make your own Marshino cherries by soaking them in red colored sugar syrup. They also make a great sweet cherry pie.

17 pints and 2 pies later. Delicious, and beautiful on my shelf. Tomorrow its canning Bing cherries, freezing and a couple more pies. Yeah! and thanks for the marschino cherry idea! Jodi
