de Bourbon cukes/cornichons?

I tried these again this year, just 3 plants, they are in much better soil so growing better than last year. But not sure what size to pick them? I let a couple get to the size I would normally pick a pickling cuke (about 3" long) but they are pretty skinny, have a "waist" and are still very spiny. What's the best size to pick them? And since I haven't found any tarragon, could they be used for a sweet gherkin?
Not sure what I'm going to do with these first 2 - might not make good bread and butter slices (I do have some "American" pickling cukes from a nursery-grown transplant, my Little Leaf aren't producing yet though lots of flowers)?
