Canning Jalapenos

Many years ago I use to can jalapenos but I stop canning for a few years and lost the recipe. With all the changes it probably isn't good anymore. I am canning again and have been thinking about canning them again. It looks like all of you are aware of what is up to date and what is not. The recipe I had, had jalapenos, sugar, vinegar, onions and maybe carrots. I don't remember anything else that is in it. If anyone has a good recipe and instruction for canning them I would appreciate it. Thanks so much.

The carrots throw me as i don't recall any recipe with them in it although there are some they could be added to I suppose.

It sounds to me like a pickling recipe and NCHFP has several different ones available:

There is also the Cowboy Candy recipe here that is sweet pickled jalapenos - sort of a Bread & Butter pickle recipe with onions included and you could always add some shredded carrots.

It has the onions and the carrots and you can sub jalapenos for the sweet peppers in it and leave out the cauliflower if you wish.

Thanks Dave! I looked into what the NCHFP had to offer but I wasn't sure about substituting things. I will check out the Cowboy candy. When I made the one I was talking about it was probably 20 years ago. I don't even remember where I got the recipe. I just remember making them with a friend. Who knows if it was approved or not. I have grown and have become more aware of things since then. I have seen several sites around that have recipes but I am not sure they are safe. Does anyone know anything about the recipes on America Cans? Where are some other places you get your canning recipes? Thanks again for the help.
