Packing in jars

I have a question about packing in jars. I canned beets a few days ago. I followed all the rules, etc. The last thing I did before putting the jars in the canner was: I put the beets and water in the jars, used a plastic tool (that removes air and measures headspace), got the air out of the liquid, wiped the rim etc.

How much do you "pack" the food in the jar? I was just looking at the jars and I see some empty space in some of the jars. I hope that makes sense? Do I need to post a pic of a jar? Headspace was correctly done, air removed, the lids sealed properly.

Is this any problem? How much or how firmly do you "pack"? Does it make any difference? Do you have to really jam it in hard? Would that break up or squish the produce, in this case beets? Or am I worrying too much?

Lids are sealed properly, all else looks good.
