Canned food shelf life

I have recently started canning myself. Fortunately for me, my wife has enjoyed canning for several years. We have a lot of pickles and jams that were canned back in 2005 and 2006. I'm wondering what the accepted shelf life is of these foods. None of the tops have popped, though some of the pickles seem to have discolored slightly. They seem to be graying a bit. Is this just due to light exposure for several years or are they going bad?
