16qt or 23 qt pressure canner?

is there a preference of one being better than the other? or is it just merely a size difference only? Is one easier to use than the other?

I'm looking on amazon and the price difference between the two is only a dollar or so. Not sure if bigger is better, ya know? Looking at the Presto. and I need the gauge too correct? this is what I'm reading on here...

Hi, I am new to canning and had to decide the same thing. I bought the 16qrt cuz it was cheaper, has the 3 piece pressure regulator (5-10-15) and not so heavy when filled. The 16qrt wont water bath quarts.
You need the 3 piece pressure regulator (5-10-15) with the 23 qrt. The 16qrt doesn't have the dial gauge (it needs checked every yr which can be a pain). I have a gas stove so the canner is not heavy for the top. I read that if yours is a smooth top(don't know what its called) then you might have a problem with the larger canner being too heavy when filled with water. Someone else can explain it better than I can.
You can always get a large stock pot for BWB quarts. I plan to do that next yr, then I can use the pot for other things.

There are advantages and disadvantages to both but the 23 quart WITH the additional 3 piece weight (additional $12) is considered the ideal and easiest to use by many.

But the type and quality of your stove plays a role in the choice. If you are using a glass top stove? If your burners cycle off and on? If the footprint area around your burners is small or tight? For those situations it is the 16 qt. as the 23 is too big and heavy.

No. You NEED the 3 piece weight. The gauge is nice and handy to have especially for the cool down phase but it isn't required.

There are 3 different models of the 16 qt sold through various vendors including WalMart and Target. One model has the 3 piece weights only. One model is sold with the gauge and the 3 weights both. And one model is sold with the gauge and only the 1 piece counterweight.

In order of preference: if you go with the 16 qt. look for one with both the gauge and the 3 piece weights. If you can't find it get the one with the gauge and the 1 counterweight and order the 3 piece weight set separately. Last choice the one with only the 3 weights. Follow me?

Or get the 23 quart and order the 3 weight set separately.

3 piece weight is what I meant. I thought they were calling it a gauge on amazon so I used the wrong word :)

We have a $50 gift card for amazon so I need to purchase it there. I can't seem to figure out if they have the 3 piece weight or not. the 16 quart and the 23 quart are almost the same price like $1 difference.

I have a glass top. so if I am reading this correctly I should get the 16 qt yes?

If you have a glass top, the first thing you should do is check the manual or check with the manufacturer's customer service to determine if canning is recommended. Some companies do and some don't, depending upon the stove.

They can also tell you any size limit on your glasstop.

Agree with Carol on checking your stove recommendations. As I said above, the limitations of your stove is what is going to determine which canner you can use on it, if any. But yes, with a glass top stove the odds are the 16 qt. is what you will have to use. The weight and the footprint of the 23 qt. is too big.

And if your burner is one of those that cycles off and on you likely won't be able to use it anyway since it makes the pressure in the canner fluctuate. Look into buying one of the many different independent cooking units discussed here for canning instead.

The glass stop stoves are great for keeping clean on top but they impose way too many restrictions on canning for my taste.

So your stove manual and manufacturer is where you have to start. ;)

PS: I looked at all the 16 qt ones at amazon and I don't see any of them with the 3 piece weight so you'd have to order it separately.

Thank you so much! I think the burners cycle on and off. I have been using a water bath canner on my stove. didn't know I might not supposed to do that. ooops!

off to see if I can figure out if I can find information abou tmy stove.....

You can always can on your propane grill or a propane cookstove if you can't use your stove. Or, bur a small, stand alone burner that can be used for a canner.
I wish I'd bought the 23 qt and will probably add one this winter for soups/stews and beans, not to mention tomatoes, if I ever get any!

I love my 41 quart and would never use a smaller one. I have the American 941. It can process 18 or 19 quarts in one shot. What a great time saver. I have had mine for 30 years. I paid $100 at the time. Now they cost more. I looked on the web the one store wants $435. + Ship.

maybe it was $105 with shipping. If I remember correctly it was $90 plus shipping about $15. That was ~1980.

When the temperature comes down you want it to come down as slow as possible. The bigger pot comes down slower. The temperature can change fast inside a small pot.
