I got Pamona Pectin's new book. They have a recipe for apricot pepper jelly that looks very tasty. Of course I have no apricots and TONS of peaches, jalape�os, and pepper. So my question is, can I safely substitute the same amount of mashed peaches? The recipe reads:

2.5 lbs apricots
2/3 cup bell pepper seeded finely diced
1/3 cup jalape�o seeded and finely diced
2/3 cup lime juice
1 cup honey

4 teas calcium water
1 tabl pectin
