Use big green beans for salad?

Hadn't picked since this weekend, some of the Bush Blue Lake beans got a bit big - Kentucky Wonders got long but still flat, may have to be strung (de-strung?). But my aunt wants to make 3-bean salad for Sat, I was wondering if these would be OK in that since they should get more tender with marinating?

why not? If they still snap, they should work. Otherwise you'll have to shell them.

Not big enough to shell - I tried on the biggest BBL, the seeds are still very small, it's just a large fleshy kind of tough (raw) pod.

They do still snap - only found 1 KW that was kind of rubbery hanging there (pulled it off and threw it in the weeds, the weeds have taken over this week too. Got my work cut out for me.).

ajsmama- I'm with you! Did several bags of GBs today, will have several more to pick tomorrow!
I'm separating the huge beany ones cause DH says they'll be fine! I'll let HIM cook them! LOL
What saves me is the green bags that keep everything fresh for several days! IT WORKS! Nancy

I like bigger green beans for dilly beans, so can't see why they wouldn't work in 3 bean salad.
