| Hi,
I just canned my very first batch ever and it doesn't look like it should. I did tomatoes and added the lemon juice, salt, and tomatoes leaving about a half inch of space at the top. Everything looked really good before the canning process, but after there's separation and about 2 inches of clear liquid. What happened and are my tomatoes ruined? |

| That's totally normal for home-canned tomatoes. It's a natural enzymatic reaction and only affects appearance. They're fine to use. There will be some settling of the tomatoes as they sit on the shelves. Carol |
