 o
Bell peppers for jelly

I've done quite a bit of looking, but haven't found my answer, so I post it to you.

Can I chop the green peppers and freeze them, then use them for green pepper jelly? Or will there be a quality issue?

So many of you have some wonderful advice, and this will be my first time making pepper jelly. I have about a bushel of peppers that need to be processed in some way.

Yes, members have done that. I would measure and pack the appropriate amount for the recipe as it's more difficult to measure frozen product.

Thanks Carol, I knew someone would either tell me it would be OK, or definitely be a problem.
