Fancy Basil Jelly

Ingredients
1½ cups packed fresh anise, cinnamon, opal or lemon basil (choose one)
2 cups water
2 tbsp cider vinegar
pinch of salt
3½ cups sugar
3 oz liquid pectin

Wash and pat basil dry with paper towels. Chop finely and place in a large saucepan. Add water and bring slowly to a boil and boil for 10 seconds. Remove from heat, cover and let steep for 15 minutes. Strain and recover 1½ cups of liquid. Place in a saucepan and add vinegar, salt and sugar. Bring to a hard boil while stirring constantly. When boil can not be stirred down, add pectin. Return to a hard boil and boil for exactly 1 minute. Remove from heat, skim off foam and pour into hot jars and process for 10 mins in a BWB to seal.
