| Ball Complete and Small Batch have a number of savory jelly recipes made with liquid pectin. That's a bit harder to find around here, and is more expensive when I can find it. Also read on this forum that it's not as reliable. There is a new recipe on Ball's website for a pepper jelly using powdered pectin. I was wondering if it is possible to adapt the other recipes by using the same exact ingredients, but subbing 1.75 oz (or 6 Tbsp) of powdered pectin for 1 pouch (3 oz) of liquid, adding the powdered pectin *before* the sugar or course instead of at the end like you do the liquid? |

| Most consider them to be NOT interchangeable so don't try it. All you can do is experiment if the failure risk is acceptable to you. Liquid pectin is readily available here and personally we have no failure problems with using it but you can also order it online from many sources. Dave |
