Merit corn stored in the fridge for over a week.....

My late corn was getting ready on the 15th of this month. I picked and processed all that I could for the freezer over the weekend.

Then came Monday, my on call week.....

I got home after dark and picked the rest of the corn, in the dark, and stuffed them in my garage refrigerator, shucks and all.

I never got the time to process it, about 4 or 5 dozen ears. I got home late every night including this last weekend.

Last night I grabbed an ear and brought it in. It was dehydrating some, a slight dent in the top of the kernels. I microwaved that ear, on the cob, and it was better than store bought canned corn, a little starchy.

I think I will go ahead and blanch and freeze it tonight, then mark the freezer bags for use in veggie soup .

Any other suggestions? I don't want to just toss it!

It makes good fried corn if you like that. Then there is corn and black bean salsa. The peppers and tomatoes compensate for the starchy flavor.

My personal favorite though is the corn fritters the wife makes out of older corn that aged too long. Make a bunch of them up and take them into work with a jar of honey. They already count on you for great treats. :)

What is her recipe?

Or is that a secret?

I didn't get to finish all of it last night, due to spending over an hour on the phone with a warranty person. I had a lightning strike on my electronics Saturday. They are supposedly on the left coast, but she had a funny accent. When I gave her my e-mail address and said @juno.com She spelled it yuno! ;)

Old Betty Crocker recipe for Corn Fritters

1/3 c corn meal
2/3 c AP flour
1/2 c milk
1 t baking powder
1 t salt
1 t vegetable oil
2 eggs
1 to 1 1/2 c fresh corn (drained if needed)
1 T sugar (optional for sweeter fritters)

Mix all ingredients, Let sit for 5-10 min. inactive to rise. Drop by T full into deep fryer or 2-3 inches hot oil (375) in pot and fry for approx. 5 mins or until nicely browned. Remove from the oil and drain on screen or cake rack.

If you like funnel cakes at the fair you can also sprinkle these with powdered sugar or drizzle with honey or syrup. In place of corn try diced cooked shrimp or ham, diced apples, diced pineapple, or diced bananas.

edited to add that if you sub beer for the milk it makes a great fish fry batter too.
