| I was blanching a batch of Hercules peas for freezing last night. On a whim I decided to coat some with melted butter and a little salt, then roast them in my toaster oven. (maybe I should say toast?) They are delicious, a kind of nutty flavor. A great snack! I just spread them in a single later on parchment paper at 350 degrees for 15 minutes and stirred them about halfway through. I did not blanch the peas that I roasted. |

| What a great idea! Thank you - I will try that! I roast a lot of veggies with olive oil, but never thought to try it with peas! Roasted garbanzos are supposed to be really good too - and on the South Beach diet. :) |
