| My husband walked in with a huge bowl of bell peppers - mostly gold and red. So it was stuffed pepper prep day - I mixed up a big bowl of sausage, ground beef, cooked rice, a whole head of garlic minced and stuffed those babies. There was a counter of tomatoes that were chopped and garnished around the edges so those are used up, too. I put chopped onion in the bottom, 1/2 can or so of condensed tomato soup, a can of water in the bottom, couple pieces of butter on top. They need to roast really a long time I've decided to be good and done - several hours. One in the oven tonight over mashed taters, the other 4 in the freezer for good winter meals.
Glad that task is done - but they really look soooo good. |

| Magnificent! Those are gonna be a taste of heaven come winter. We have been anxious to make up a batch too but so far all our bell peppers are staying small. Broke down and stuffed a bunch of banana peppers for now. Thanks for sharing the pics. :) Dave |

| Oh my - we just dined on that oval baking dish with the handles to the left. I can't begin to tell you how good they tasted. I just love stuffed peppers. I have vivid memories of my mother making them - she would clean out the peppers and while they were still damp inside she'd sprinkle them with salt - she always said that was an important step. So I always sprinkle the insides of my peppers with salt. :) I know for sure she didn't use sausage in them but we love the combo of ground beef and sausage with a lot of garlic and the rice for the stuffing. These are satisfying garden days. :) Hope you get some of the big guys soon, Dave. Our peppers are really lovely this year. And this is such a good way to use up all the tomato odds and ends, small ones, bad spot here and there. Deliciosa! |

| The first bell peppers of the gardening season are used for stuffed peppers here. I don't pick ANY of them until I have a batch stuffing size. It's a rite of passage, a summer ritual. I stuff mine with rice as well, usually with tomato sauce, diced onions and garlic, mince beef, and top with cheese, but last year I decided to change the routine a little and see how they'd taste stuffed with black beans and dirty rice. Uh huh.........that one was a winner. |

| The bean rice stuffing sounds great. I suggested yesterday I make up some of them stuffed with something different and my husband gave me the usual "look" like why oh why would you choose to change perfection. LOL. I do think I'll do a side dish one night with something like this - I love black beans - red beans and rice is one of our favorites, too. |
