| Has anyone compared freezing roasted beets versus freezing beats that have been boiled? Last year I boiled them and froze them but we found the texture a little bit less then perfect. I wondered if roasting them to keep them better textured? Thanks! |

| I was hoping floral would stop by to answer your question as she has talked about roasting them several times before. Personally I love them roasted but then we eat them rather than freezing so I can't say what the effect of the follow up freezing would be. I think the primary thing that affects texture of beets is the size when picked - smaller being more tender. Dave |

| Thanks Dave! We also eat them, but just now we have a good bit more that the three of us can eat with the beans, carrots, broccoli, cabbage, and cauliflower that are also hitting the table. I have pickled a bunch, and since I did buy more jars... |
