Ball zesty peach barbecue sauce question

Hi there. I love this forum; been a lurker for a while. I just made Ball's zesty peach barbecue sauce and only got 6 half pints (recipe says approx. 8). I think I may have messed up on the amount of peaches - I measured 6 cups sliced, then afterwards chopped them finely. I just reread the recipe and it called for 6 cups of finely diced peaches. Now I'm concerned the ratio of peppers/onions to peaches will be wrong. I used about a tablespoon shy of a cup of each onions and peppers. I used one medium onion and 1/2 of a large pepper, as the one large pepper and one large onion called for would have been way more than a cup. Will this still be ok or should I get more peaches and reprocess? Thanks for any help!!

You have nothing to worry about as long as you did not reduce the amount of vinegar in your batch of peach salsa. Since you measured using sliced peaches instead of diced peaches this batch may be a bit tart but you can always add a bit of sugar after you open if needed. This is one of our favorite recipes.

Thank you very much canfan! So glad to hear it's still good. I didn't decrease the vinegar. It tastes amazing - used some on grilled chicken tonight.
