Fresh cheeses from milk that went sour?

Weirdo question of the day :).

So, I see these recipes on the web for making cottage cheese or queso fresco from milk that went bad in the fridge.

Some say to heat it at 180 until it curdles, adding vinegar if you need to, and others say that if it has curdled already in the fridge you can skip the heat step and just drain in cheesecloth and eat.

Umm, is this safe?
