Need a pickle recipe for huge Armenian cukes

I have three giant Armenian cucumbers that I'd like to preserve. I might make one into zuchinni bread but I'd like to make some pickles, too. I'm the only one in the family that likes bread and butter pickles. Everybody loves dills or spicy dill pickes. I could really use a recipe for spicy dill pickles without sugar.
I don't mind if they are sliced, speared or chunked in odd sizes. We can always use them on hamburgers. We love spicy dilly beans, spicy asparagus pickles ( even the asparagus tips), so I'm sure something like odd shaped slices would go over fine.
The largest cuke is 7.5 pounds but I've eaten some of it. Not bad, just a few seeds in the middle and not quite as nice of texture as the little ones.

There are all kinds of pickle recipes here as well as those at NCHFP. But 'no sugar' is really going to limit your options. Plus it is going to create a quality issue on top of the quality issue with the cukes you are using.

Are you sure you wouldn't rather grind them up into some form of dill or reduced sugar relish?

There is a recipe for no-sugar pickled beets that might work if you sub cukes and do the cukes in chunks.

NO SUGAR ADDED PICKLED BEETS
7 lbs of 2- to 2-1/2-inch diameter beets
4 to 6 onions (2- to 2-1/2-inch diameter), if desired
6 cups white vinegar (5 percent)
1-1/2 tsp canning or pickling salt
2 cups Splenda�
3 cups water
2 cinnamon sticks
12 whole cloves
Yield: About 8 pints

Otherwise there is the standard NCHFP Quick Pack Dill recipe that you could reduce the sugar in.

Thanks Dave.
I'd like to stick with a savory pickle, rather than sweet.
Either fermented or vinegar would be fine.
I now have a lot more cucumbers.
I planted two plants, in the shade. That would normally not be enough but this year they are going crazy! Like zuchinni plants on steroids!
Far more cucumbers than we can possibly eat fresh.

It sounds like you've got enough cucumbers to make a batch of lacto-fermented dill pickles. I recently started a batch in my Harsch crock, but any good sized glass or ceramic container will work.

Omg, the lacto-fermented garlic dills turned out good! Also made kimchee with them which is awesome!
Made some eggplant lacto-fermented pickles, too. Delicious, too!
