Anyone use food processor for peach jam?

| Just bought a case of peaches at the farmer's market this morning. Didn't get a great deal on them, but at least I'm supporting the local growers. Anyway, I'm going to try the Ginger Peach Jam I mentioned in my other thread, but I'm just wondering if I could throw the pitted, peeled peaches in the food processor and pulse a few times, instead of chopping them all by hand. Do you guys prefer the cubes of hand chopped peaches in the jam, or would it turn out just as well with the food processor?

| I think it all depends on your food processor. Mine would turn them to something more like peach butter and I'd rather have some chunks. We use one of the hand choppers (kind of like those slap chop things you see on TV) for ours. Why not take just a couple of peaches and give it a try - see what the end texture is? If ok then you'll know. If too mushy then you just add those couple of peaches to the jam and chop the rest by hand. Dave |

| I agree, Dave. I have a nice food processor but fruits and vegetables have a very fine line between chopped and pureed, and I never seem to get it right. It's always a puree by the time I'm done, even if I use pulse. I don't usually chop fruit anyway, I peel, pit, add the pieces to a bowl and smush it up with a potato masher! However, for jam, I might do most of the peaches in the processor and then chop a couple by hand for the chunks. Hmmm... Annie |

| Okay, well here is what I ended up doing. I put the first peach in the food processor and pulsed a couple of times. The chunk size seemed okay, so I did the rest of the peaches for that batch in the food processor. I would describe it as somthing between grated to a fine dice with a few decent sized chunks. Any, after the first batch I saw Dave's suggestion about the chopper, so I used that for my second batch, and like that much better. Thanks for the suggestion! Tomorrow afternoon, I'll make a couple batches of Spiced Peach Jam and that should finish off the case of peaches. DH was nice enough to pick up some more 1/2 pint jars, sugar, and more pectin for me, so I should be good to go. After the peaches, I think I'm done with jams/jellies until the local apple crop starts coming in. Hopefully, the cucumbers will start producing enough to make some pickles soon. I'd love to make a batch of Annie's Salsa, but who knows if the tomatoes will ever get ripe! Sure feels good to be canning again! Bonnie |

| When I get my peaches pitted and skinned, I just take a potato masher to them. Easy enough to do with the small quantity one uses for jams. As you boil it to thicken the chunks decrease in size anyway. I like to bite into chunks of them. |

I'm teaching my daughter to can. Her first try and success was last fall when she made Dill pickles. This years she's making jam and loving the experience. Next week she is entering the 3 jam category at our ag.fair. She made a peach and used her non-electric chopper with the crank on top and thought the pieces of fruit were much to small. I believe a potato masher would work well or the devise Dave used. At least there will be bits of fruit in the finished product. Sue also made a Strawberry-jalapeno and Pineapple jam. This is one time I hope she wins over me. My jams are Strawberry-rhubarb, Blueberry and Apple-Pie. |

| My canning book says that the food processor damages the natural pectin in the fruit. If you use the processor, I would add some extra pectin. |

| I just did, and I got a nice mix, from almost puree to large chunks that I cut into smaller pieces. I always use pectin when I make jam. I've got strawberry and peach now - I used those donut peaches - they are very tasty. Next salsa. |
