dehydrating woes

We are newbies having some issues with dehydrating and hoped someone could help.

Dehydrator = Excalibur 9 tray
Food = carrots and some other veggies
Storage = After dehydrating for 12 hours, veggies are vacuum sealed using a FoodSaver.

PROBLEM = Vacuum sealed bags are exploding/ opening after a month of storage.

My thought is that the veggies are not dry enough (even though they look and feel like leather afer 12 hours). Could it be that moisture still in the veggies causes gassing which explodes the bag. We dont want to proceed any further with dehydrating until we have a handle on our problem and solution. We have already lost LOTS of food.

Any thoughts are greatly appreciated!

Sounds like the problem to me. Did you condition the foods? You need to do that with each batch before sealing up.

I agree with Linda Lou, I think the food must not have been quite dry enough.

I find that some foods take quite a lot longer to dry than my guide tells me, apples are one of them, I've never tried to dry carrots but I'd think they were similar.
