Cayenne peppers, harvesting and drying

This year planted a cayenner pepper and I have gotten 2 cayennes. I do not know when to harvest then, though. Now they are pretty big (I think, I normally see cayennes dried and I guess drying shrinks them) and they are green. They have been like this for weeks, I think, and the colour is not changing. Is it the time to harvest them now? Should they become red?

Also, I would like to know whether one can cook with fresh cayenne in the same way one cooks with dried cayenne. And whether you would explain to me the process for drying them.

Wait until they are red. They can be eaten green, but the flavor is not fully developed.

I live in a dry area, so I string them with a needle and thread, and make them into a ristra. I let them air dry this way and we had good success on the last batch. If you live in a damp z10 then maybe use a dehydrator.
