Hi

This year planted a cayenner pepper and I have gotten 2 cayennes. I do not know when to harvest then, though. Now they are pretty big (I think, I normally see cayennes dried and I guess drying shrinks them) and they are green. They have been like this for weeks, I think, and the colour is not changing. Is it the time to harvest them now? Should they become red?

Also, I would like to know whether one can cook with fresh cayenne in the same way one cooks with dried cayenne. And whether you would explain to me the process for drying them.
