| I froze my beets before cooking them so when I thawed and cooked them they were rubbery, I was wondering if there is any way to change the texture on the next batch I am going to cook? Any advice please? |

| Have you tried cooking them first, then freezing until you need them? That way the cooking might naturally stop the deterioration process and maybe they will taste better after freezing? I have never done it but was thinking that might help! |

| Agree if you froze them before cooking them then rubbery beets results. But why freeze them if you are going to be using them soon anyway? Link below is the instructions for how to freeze beets. Also size at harvest can make them tough and fibrous - smaller size is generally better. Dave |
