Muscadine grapes

We planted some muscadine grapes on an arbor two years ago and they are now producing more than just a handful of grapes. We covered the vines with netting. It has been a bit dry here lately. We haven't been getting our usualy afternoon thunderstorms with as much regularity and it has been hot. It is dropping fruit or something is knocking it off. I pick up what is there on the ground and the next morning about half of what has appeared over night has been eaten. I'm voting racoons.

The grapes are slightly underripe. Edible but not very sweet. I've been rinsing the unblemished ones (not split and no teeth marks) and tossing them into the freezer.

What do you think of using them for jam. (We prefer jam to jelly.) I have a Roma strainer with the grape spiral. Since they've been frozen, do you think I'd need to cook them first or do you think the freezing would break them down enough to just toss them into the Roma?
