What can I make with these chilies

What can make with these? I have already picked some. Want to use before they get bad. Can i make a bottle sauce with them? does any one have a recipe for sauce.
They are poblano, hot banana. chipolte,jalapeno, red n yellow peter pepper n small red hot chilies.

Do you like relishes? There are some great hot pepper or hot pepper and onion relish recipes.

You can also add some mixed sweet peppers to them for a Sweet n' Hot sauce or relish.

And dried peppers will store almost indefinitely if you have a dehydrator. Many folks will dry them and then crush/pulverize to make chili powders that can be used as a seasoning in all sorts of recipes.

When all else fails, freeze them for later use. peppers freeze beautifully. Just core them lay out on a cookie sheet to individually freeze them for a couple of hours and then pop them all into a ziplock bag. They are good to use for years.

Never made relish, do u have a recipe? i also have some mini red n orange bell that i can use.
Also was thinking of just roasting them n blend with vinegar to use as a sauce, would that work? how much vinegar should i use? I have enough chopped hot peppers in freezer to last me years, i only use them for fresh salsa. I went overbroad in growing hot peppers, did it mostly for my brother in law. So i need to have new ways to use them. Thanks again for your help.

Marinated Hot Peppers Uses oil and vinegar and after some shelf time makes a good spicey salad dressing or hot sauce. If you mix in sweet peppers too you get a sweet n' hot sauce.

Hot Pepper Sauce Again you can use mixed sweet and hot for a different flavor. Just keep the total amount of peppers the same.

Pepperjoes.com has lots of great recipes but note they are for fridge storage, not canning.

You can also find all sorts of recipes over on the Hot Peppers forum here but again they are for freezing or fridge storage, not canning.
