freezing habanero

I picked 4 habs the yesterday and am waiting for another 8 that should be ripe in a week or so. Would it be ok to freeze them whole until the others are ripe?

Sure. Do it all the time. They will be softened when thawed though.

I do it all the time, but I cut off the stem top and clean out the seeds then freeze individually on a tray before bagging. Sometimes I cut them in half as a space-saver.

Of course, leaving the seeds in is fine.

I don't freeze habs whole because of all the peppers they have a tendency to mold on the inside and I want to catch that while they're fresh.

Of course, that's more prevalent in some climates than others.

It is fine if they are soft. I will be making a hot sauce when I have them all picked. Ok I will cut the tops off but I think I want the heat from the seeds.
