Probably dumb pepper question

I see in so many recipes the recommendation to peel peppers. Until this year, I have virtually zero experience with anything but bells, which I have never peeled.

WHY do you peel peppers? And do you do this with only certain kinds, or for certain recipes?

The only peppers I peel are roasted ones. I can't imagine peeling any others.

Certain recipes. But you can always roast them for other recipes too to get the change in taste.

So peeling changes the taste? I thought maybe they roast peppers for the express purpose of peeling them easily. Does that change the taste too? What about for use in salads? Are only certain peppers good in salads? Maybe those that need peeling have tough skins??

I know this is probably OC, but I am trying to think through what peppers I want to grow next year and for what kitchen uses.

I think peeling would change the taste even if you didn't roast them since the peel restricts the absorbtion of any flavoring ingredients you added.

Peeling is recommended in so many foods since it is the primary source of bacteria and contaminants that that may be part of the reason why it is also recommended in some canned pepper recipes.

But all peppers freeze so great that preserving any of them is easy to do that way and doesn't limit your choices of which one to plant.
