| Hi,
I am hoping someone can help me. I have canned tomatoes before. But this year we planted a lot of yellow tomatoes also. Does anyone know if this will make a difference. Or should I BWB them just as I do the red. I did try googling and found nothing. Also another question while I am here. This yr has been so dry my tomatoes come in all at once or nothing for a few days. Can I freeze them whole and cored until I get enough to do a large batch.. Thank you so much for any help :) |

| Yes you can core and freeze them. Many do and its often discussed here. Yellow tomatoes are treated just like red ones or any of the other colors. Same methods for canning, same packing instructions, same processing times either BWB canned or pressure canned, same amounts of added bottled lemon juice or citric acid. Dave |

| Thank you so much Dave I thought so, but wanted to be sure. Looks like next week I will be doing a lot more canning already done 16 jars of Annie`s salsa. Now on a search for a good Mango or peach Salsa. If anyone has a good recipe please feel free to share. But Dave TY Once again :) |

| There's a peach salsa in the document below. Also, if you search "peach salsa" on this forum there's a Bernardin recipe (IIRC it's in the Ball Complete Book of Home Preserving) posted somewhere. Carol |
