Longest I have gone is 24 hours and I have seen some recipes that say "no longer than 24 hours" when salted. But if you rinse them well and just put them in iced water they should be able to go for a couple of days at least, maybe longer. The worst that can happen is they will end up a bit softer and since you are going to make B&B pickles with them then that is no problem at all. it is normal for them to be softer anyway.

I figured I'd make B&Bs just because they weren't fresh-picked. I'll try to get to them this AM after everyone has eaten and I have the kitchen to myself. Also have week-old edamame and green beans picked this weekend to blanch and freeze, and since I'm not going to market tomorrow will have squash and tomatoes to do something with. Thanks

Thanks Marla - I got them done (and 1 steamer basket of edamame) between emails, chat and phone calls. Glad I didn't wait for the kids to get up.

Preparing for out-of-town family now, plus meal for Sat (asking people to bring sides and desserts, I'll take care of deli platters and coffee). Gotta get my fridge empty and clean house (plus haircuts for me and DS).
