I am so proud...

of my mother. She is in her 80's and has been canning and preserving all her life. Oven canned pickles, pork in crocks of lard, oil in her canned spaghetti sauce, no acid in canned tomatoes, etc. She ate all this growing up, we kids ate all this growing up, and nobody died!

Over the years of coming here and reading posts, and posting my own questions, the good and sound advice of Dave and Grainlady and so many others, not to mention the NCHFP have taught me to be a better canner. I have passed that info along to my mother, and now she is telling her sisters and church lady friends how they must change their old ways, that her son read on the Harvest Board about new and safer techniques, and has been teaching HER the correct way to do things.

So, as I said, I'm very proud of her, and very proud to be associated with the good and learned people of this thread. Thank you.

Now that is great! Kudos to her for keeping an open mind and a willingness to learn new things. Especially at her age when so many simply refuse to change. And to pass it on to others too is even better.

Be sure to pass on my high regards to her from this 72 year old and thank her for all she is doing.

It's good to know that " you can teach an old dog new tricks." I guess there's hope for me yet. :-D

I learned a great deal from my MIL and one of the biggest lessons I learned from her canning was to be willing to change. I still remember when the instructions for added acid in tomatoes was introduced. She was the one who told me.

Your mother is a wise woman and what a compliment to you that she sets so much store on your knowledge.

I believe it's possible to honor the best of the old ways while allowing for new research and updated methods.
