I'd like to can peach pie filling this year, but I don't have Clear Jell. I assume I can use the NCHFP recipe ( http://nchfp.uga.edu/how/can_02/can_pie/peach_filling.html ), minus the Clear Jell, and just thicken the filling when I'm baking the pie...correct?

Yes. I much prefer it that way as I don't like the results of Clear Jel. The jar count will be off as more fits in each jar since it isn't as thick. Of course you can also just can them plain and then turn them into pie filling when ready to bake. That way they can be used for lots of things besides pie filling. Dave

I do mine plain, I have lots of simple old recipes that just call for 'fruit'. I don't add sugar either, just some lemon juice or fruit fresh.

Thanks! I mostly do plain (in syrup), but I thought I might try my hand at a small batch of pie filling.

I do plain fruit, only in their own juice.
