| Hello to all. I will be going to the Oklahoma State Fair next month. In the past I have just casually wandered by and glanced at the Home Canning display. This year, for the very first time, I will take a good bit of time and really study the entrants and winners. Do any of you do the same? And would you have any thoughts or suggestions on what to look for? I plan to just enjoy looking but want to really appreciate what I am seeing. Thanks Gene |

| GeneTNG, The canned entries are a must see for me. Especially like to see names, ingredients and see what people are canning. You can usually look at the county extension office or fair board web site and find out the criteria for canning entries. Recipes must follow approved and tested methods. |

| Main thing I eyeball is appearance in the jars. Check for colors, how packed, clarity of any syrups, etc. ie: with beets and jams, even with the same ingredients, you see a wide range of colors. Note which are the most appealing in appearance. Also note the jar presentation - some folks really get creative with their presentations. Dave |
