Recipe for Crisp Bananna Peppers?

I have lots of bananna peppers that are coming in on my plants. I would like a recipe where the peppers remain crisp. I had a recipe years ago where the raw peppers were packed in a sterilized jar and then cloves of garlic were added and a combination of boiling hot vinegar, water and salt are added to cover them. Lids were applied and there was no processing. I know what most of you are thinking- not a good thing to do. But I don't want soft peppers! Thank you.

Using Pickle Crisp resolves the soft problems. There are many discussions here about it and it is the ideal solution IMO. Or you can use the NCHFP instructions that calls for a pre-soak in pickling lime.

I shamefully admit to doing the same thing with jalape�os. No processing, just turned the jars upside down. I solomnly vow I will never do this again. Mushy peppers or not, I'll never take this chance again. This is the only canned product I ever did without processing. I truly didn't know better at the time. Every jar sealed perfectly. Peppers were crisp and awesome. But all it takes is ONE time for ONE thing to go wrong to get botulism.....
