| Hey all. Growing beans for the first time this year and am getting a bumper crop (var. french velour in big containers, highly recommended). Borrowed a pressure cooker from a chef friend and am going to dive in. I'm familiar with its basic operation, but forgot to get the "cooking rack" from him. This is the circular piece of aluminum with holes in it that goes on the bottom, I believe its to keep the jars raised slightly so the contents don't scorch or the jars crack from the heat. He's away on vacation and I don't really want to go searching to buy one, does anyone know if something around the house can be substituted? Maybe balls of foil or something like that? Thanks for your time! :) |

| I hope what you borrowed was a pressure canner rather than a pressure cooker? If not then freezing the beans is the only option. You can make a rack for the bottom of a pressure canner out of spare canning rings/bands laid in the bottom of the canner or you can use a cake drying rack or an inverted double layered aluminum pie pan with a bunch of holes poked into it or a folded kitchen/hand towel as a last resort.
