| Would an expert canner please look at this ketchup recipe and tell me what you think? Ketchup No processing time given. I have tasted this and it is really good. Since it has more onion & less vinegar, but also a lot more sugar than tested recipes I have looked at, I wanted to check here to see what you think. Thank you! |

| aluckybear, My friend that gave me the recipe uses whatever hot pepper she has at the time, usually jalepeno. This recipe tastes great, so I would like to try it if it checks out. Otherwise, the BBB ketchup recipe is somewhat similar so I will go with that one to be safe. |

| Note the BBB recipe calls for more tomatoes, more vinegar and much less onion and sugar. So it will be more acidic pH. You can use the BBB recipe and sub the hot peppers for some of the sweet peppers in the BBB recipe and add more sugar to taste with the BBB recipe with no problem. This one could be ok but needs more added acid and I am always suspicious of recipes that provide no processing times. Sure signal it is an untested one. Dave |

| Dave, thank you very much for your advice. I will use the BBB recipe and sub some hot peppers and maybe more sugar as per your suggestions and see how we like it. thanks! |
