making peach jam

Sorry for all the questions on different posts, but i have all these peaches from my neigbor tree that is hanging on my side and i hate to see all these peaches go to waste.
I will be using the recipe from Ball classis pectin, and it say one batch makes 2 half pint but not to exceed 10 batches, so does i mean if i have enough peach to double or tripe the recipe I can?
In regard to measuring them can i diced or slice them for the amount listed.
Thanks again for all your help, this forum as well as the others are great.
Also can i freeze some with lemon juice only to make more jam later?

Terry

Yes, you can double or triple the Ball recipe, but I wouldn't do more than that at one time (about 6 was the old standard with the boxed pectin). That's one thing they didn't make clear when they switched to the bulk containers from pre-measured boxes. We were always warned not to double batches, but they made a larger batch then!

You need to prepare your fruit per the instructions (i.e. mashed, diced or whatever), then measure.

You can always freeze them for later!

I read it to say not to exceed 10 JARS. Yes, if you go to website, it will show you exact measurements for the 10 jars. Unfortunately that pectin jar will only make about 25 1/2 pint jars. I bought bulk pectin this year, but still use the Ball website. It's great, they ask for the fruit, whether jam/jelly, which pectin you want to use and it will give you the measurement for regular sugar, low sugar or no sugar.
Make sure you add the lemon juice or peaches don't want to jell.
