| This may seem weird but I planted beets, harvested the large ones but let the small ones stay in the soil. It's now nearing 1 year later and I've harvested the once small beet- now a good size. It's no longer edible raw (it's very astringent) but I'm wondering if it's still good for cooking eg. in a soup (for flavour) rather than to eat. |

| Cook one and then you will know. Different climates may produce different results so give it a try for yourself. Let us know the results. |

| FYI Without looking it up, I believe beets are biennial. In other words the second year, like yours, they produce seeds. |

| True and second year crops are primarily used for cattle feed. Pithy, bitter, and lower nutrient levels. Or tilled in as a green manure for soil improvement. Not something that is normally done intentionally for human food crop. Dave |
