| I made some jalapeno jelly. I didn't have enough jars prepared so I put the last of it in a refrigerator container. As soon as It cooled I sampled it. It was plesantly hot. quite stiff.
I opened a jar at a family gathering. Everyone liked it but... It had NO heat and was the proper consistancy. It had the taste of jalapenos Just no heat. Why? Would I be asking for trouble if I left some seeds in the next batch?

| The heat is in the white membrane and seeds, so you need to leave some of that in the jelly. I end up seeding about 2/3 of the jalapenos, leaving the seeds in one third, and it comes out to my taste. Of course, some like it hotter and some like it milder. |
