Watermelon Rind Pickles

We have pickled watermelon rind for years and always wound up with nice crunchy pickles. This year we used the new, fashionable "seedless" watermelon rinds, and have very soft pickles. Has anyone else tried pickling the seedless melon rind and had similar results?

Our recipe calls for peeling and cutting up the rind, chilling it in ice water at least overnight, draining for a day (which is when we think the rind lost all of its crunch), then adding to a brine of white vinegar, sugar, and oils of cinnamon and cloves. This is similar to an old Joy of Cooking recipe.
