| Okay, I have searched high and low for an answer to this, but I accidentally forgot my jam in the canner. I was watching a show in the other room and never heard the timer. Somehow, it completely escaped my mind.... 2 hours later. I walk into the kitchen and realize the jam was still boiling! OMG! The water was well below the jars (clearly, it boiled out). I pulled the jars. They didnt break - thankfully. AND... shockingly they all popped. Now my question is... did I kill my jam? Has anyone ever done this? Is it just a batch for waste? Sadly, this is my third batch of Fig Jam (thank god our Fig tree is insane this year) and every batch has had an issue... I am starting to take it as a sign. First batch, broken thermometer. Second batch, burnt. This batch... well... Any advice? |

| Wiser people than I will post in the morning, but for tonight, stick it in the fridge. Worst case scenario, they will tell you to can it again (!) More likely, it's fine as is. Did you put plenty of lemon juice? It might come out deliciously carmelised :). FYI, if you make any more fig jam, may I recommend adding some julienned lemon peel, in addition to the juice? It's fantastic! |

| Oh, it sealed the question at this point I think will be taste and if it broke down all the pectin. I used a full lemon (and peel) plus some lemon juice. If it turns out to be a happy mistake, I will be... well happy. :) I am new to canning (this is my four batch attempt). Some have been great, others... flop. But its all learning. I just want to make sure I didnt kill it (or anyone who eats it). :) Thanks for the late night reply! |

| Like Nila, I'll wait for someone with more knowledge to speak to the safety issue. Might I suggest though that you get a timer which continues to alarm until it is turned off? My microwave timer goes for several minutes, and I also have a little digital that in addition to not shutting up, starts a countdown up until it is turned off. I use that one for baking when I don't stay in the room--it can tell me exactly how much extra time was added. Keep going and don't get discouraged. Everyone here has goofed something up with their canning. Like you mentioned, it's a learning process that never ends. (And I am completely jealous of anyone with a fig tree) |
