There are directions on the site for nectarines. It says you don't have to peel them.

Cold pack ? I think you must mean raw pack. There are 2 methods of packing the jars. Raw pack and hot pack.

They mean the fruit will float a lot in the jars by poor quality. You get more fruit in the jars with a hot pack since the fruit is softened and will pack more tightly. Personally, I don't like a hot packed fruit. It winds up too soft.

I've raw packed them before, be sure to use the lemon juice/fruit fresh, they will definitely need it.

Ok, I feel a little dumb I didn't look specifically for nectarines, just assumed they were covered under peaches ;).

That's ok, my grandkids call them 'naked' peaches

Too little to be pervs, yet. Less than 10, but I'm sure they will get there.

Peaches have sweaters on, and Nectarines are naked. It helps them to tell them apart.

We can nectarines every year. In fact this summer we did 267 quarts. We leave the skins on. We much prefer them to peaches because to us, they have MUCH more flavor. We hot pack them, just heating them to boiling in a apple/white grape juice mixture and no sugar. I taste them after heating and I want the juice to be just a little sweeter than I want the finished product to be since more juice will cook out of the fruit.
