malabar spinach, what to do?

Turns out I can grow malabar spinach... What can you do with it to preserve it? Anything besides blanching and freezing? Thank you!

You can dehydrate it. Works great and stores indefinitely. You can also can it just like any spinach.

Thank you. I hadn't thought of dehydrating it. That's a good idea. What do you use dehydrated spinach or malabar spinach in, please?

Add it to soups and stews, casseroles, sprinkle it in lettuce and pasta salads, add some to pasta sauces, mix some into meatloaf, sprinkle it on burgers, make spinach dip with it, mix it with mayo for a sandwich spread, on scrambled eggs or in omelets, etc.
