| I preserved some Balsamic Jalepeno Jelly, everything went well, the jars sealed perfect. It sat on my counter for 2 weeks, before I realized the sealing lids had been used before. I put the jelly in the fridge. It is not very hot where I live and I am wondering if it is okay to eat it out of the fridge. And give the rest away, as long as it is eaten soon. I am hoping I don't have to throw it all out. Thanks for your response. |

| If they sealed, you're fine. Even though it's not "recommended" to reuse lids, I've had to do it in the past when I ran out of new ones. |

| The reason they say not to reuse lids is because a used lid is more prone to failure or a weak seal. It's not necessarily a food safety issue - the used lid isn't creating botulism. If your seal fails, you can tell. In which case, all your hard work goes in the compost. The jars are fine. No need to store in the fridge. no need to rush to eat. |
