Sunflower Seeds

The husband complains every year I don't do anything with the sunflower seeds so I want to try using them this year. My So EAsy to Preserve book says to allow to dry on plant or in dehumidifier and then roast at 300 degrees for 10 to 15 minutes. I assume I can wash them first if needed? They are dried on the plant so if I wash them do I need to dry again? I don't currently own a dehumidifier although we are looking into it. Also, is the drying and roasting required to store them? or just to eat them? Anyway to add some salt or seasoning in this process?
