Hi Folks,

A couple of months back I canned pickled peppers and two of the jars did not seal properly. I immediately relegated those to the fridge. My questions is: how long will they last in the fridge? It's already been two months and they seem fine. Just wondering at what point should I become cautious.

It depends on the strength of the pickling solution and the refrigerator temperature. A pickled product can last a long time in those conditions. Probably you'll notice changes in texture (i.e. softening) first.
