Beef Stew

I would like to can the beef stew on this site http://www.foodsafety.wisc.edu/assets/pdf_Files/Canning Meat, Wild Game, Poultry, & Fish Safely B3345.pdf Page 23, It says to brown the meat, add the Veg. put in jar add water or broth I thought I had to heat the veg. do I just put them in the hot broth or water, if so for how long?

When I read the recipe, I take it to mean add the veggies to the hot meat pot, then heat the veggies, then add to the jars. But yes, the instructions aren't very clear. So I probably read it that way based on my knowledge of canning.

Thanks, I guess I was thinking of browning the meat in a little oil, not boiling it in water, That is why I didn't understand how to do the veggies, can I still brown the meat and then put it in some beef broth and add the veggie and bring to a boil? They just need to be warmed right?

I just made a bunch of "Beef Stew with Vegetables" from the Ball Blue Book...it calls for browning the meat cubes in a small amount of oil, cover with boiling water, add veggies, bring to a boil, and can. So the vegetables, in this case ARE heated before being loaded into the jars.

Yes. I'd brown the meat, add the veggies and some broth, bring to a boil, fill the jars, add more broth, then process.
