Pickled cantaloupe. Don't call them muskmelon, that might help the search. Most muskmelons are not really muskmelons, but cantaloupes.

I did my search on cantaloupe, but was careful to use muskmelon here since all that I had read said that most cantaloupes are really muskmelons, and wanted to be sure to use the correct terminology when seeking expert advice. Either way, cantaloupe or muskmelon, is there something I can do with large, green melons? So sad to have waited all summer and then not be able to do anything with them. :(

Your welcome. I found that pickled cantaloupe is an acquired taste that hubby and I like, along with the grandkids, but not our kids.

I'm so happy that my melons won't go to waste. The ones that were partially ripe made great sorbet and the rest I'll pickle. I remembered eating watermelon rind pickles as a kid, and that's why I thought I might be able to use them this way. I'm amazed at how adventurous your grandkids are! I don't think I would even be able to get mine to taste it. Thanks again.
